This was a gift and I’m really happy with it. Tonight I made the meatloaf. I did improvise because I didn’t have a few ingredients, but I substituted for ones that I do have that are very similar. The recipe gave me the basic structure and increments. My son came home and it passed the taste test very well. In fact it got a “I’m now a fan of meat loaf” review. In the past, my meat loaves have flunked his taste test.

This cook book has helped me to upgrade my regular cooking and my gluten-free cooking with practical tips and ingredients that I myself had not thought of. Its well thought out and has nice yummy looking photos.

Finally…a gluten-free cookbook that takes into account us moms who are wanting to feed our families healthy wonderful gluten free meals but just do not have the time to spend hours in the kitchen. Right now I am carting the kids to baseball practice, tennis lessons, tae kwon do… I need meals that I can get on the table quick. So far I have made about 3 of the different meals in this book and they have all turned out wonderful! And they were all made as we walked into the house at 5:30, after practices, and then were on to the table by shortly after 6. This book will be getting much use for sure! Kudos to the author for understanding what us Moms need today!!

I set the timer on two separate nights and made two complete meals from Carol’s latest cookbook in 30-40 minutes. They not only pleased my family, but gave me new recipes and techniques to get dinner on the table faster every night. I spent the first week I had the book reading through it completely. There are so many good tips on cooking, organization, and ingredients along with Carol’s stories and sense of fun that I’m glad I took the time to read before diving into the recipes. While the book is organized into meals with desserts, I’m finding I will be mixing and matching recipes and using Carol’s tips to create my own quick meals too.

I already owned Carol’s first book, Simply…Gluten-Free Desserts, and love it. Couldn’t wait to see this one – and it certainly didn’t disappoint. I love that not only has she given easy, quick recipes, she has them organized into meals and even has some meal plans labeled for certain types of events. Many recipes are also dairy-free or easily convertible, so people with dairy issues can also enjoy these easy-to-make recipes. Her dishes are very approachable for families, and she remakes many previously “gluten-full” dishes so well, your family and dinner guests would never know they’re gluten-free. This is definitely a great resource to use time and again.

I’ve been a fan of Carol for years, especially her baked goods recipes – no one can ever tell they’re any “different” than anyone else’s! So when I saw this new one for quick and easy meals, I was excited to try it, knowing they would be just as awesome and they were! Though I follow a “paleo” diet, there are plenty of recipes in here that can be easily modified for both me and my family, which includes two small children.

OK, I’m a gluten-free vegetarian, and this is not a vegetarian book, but still, there are so many wonderful recipes for people like me! I’ve just tried the Whole Grain Biscuit Mix and used it for a variation on the Whole Grain Muffin recipe and I can attest to the fact that these recipes are easy and delicious. I’m dying to try the Dairy-Free Coconut Pie, and the Breakfast Quesadillas and the Vegan Breakfast Bars, and for the meat-centered dishes I just think “tempeh or tofu?” and I happily keep reading and learning from the author’s excellent recipes.

 “It is everything I expected and more!”

I’ve been following the Simply Gluten Free blog for years, and have always loved Carol’s meal ideas, so I was elated when she came out with this cookbook. It is everything I expected and more! Though there are some tips, this book is all about the recipes, and she really covers the bases: Quick Mixes for gluten-free basics; Simple Suppers organized by meal, each including an entree, side or salad, and dessert; Easy Entertaining organized by event (client dinner, tapas party, date night, etc.); Pantry entrees; and Slow cooker recipes.

My family is dairy-free, and I should clarify that this is not a strictly dairy-free cookbook, but there are many entire meals that are dairy-free, and most of the other recipes are fairly easy to adapt. Only a few rely heavily on things like cheese, so I found a ton of ideas and options that fit our needs. Some immediate favorites were the Shrimp in Romesco Sauce, Asian Noodles and Meat Sauce, and the whole curry menu (Vegetable Curry + Spiced Basmati Rice + Dairy-Free Mango Lassis). I could easily see cooking my way through this cookbook one menu at a time!

This is a brilliant book. I love how it’s sorted into meals so all of the recipes for that meal are together and I don’t have to go thumbing through the book. What a great idea. I’ve made some of these recipes too and they are delicious. Happy to give it to my clients too.

I love the way Carol blends time-saving tips, healthy recipes, and fascinating stories. Her books are not only a delight to use for cooking, but they provide fun reading as well. Her “Curry in a Hurry” recipe is one of my favorites and it comes complete with various options (dairy-free, vegetarian, spicy, not-so-spicy), an interesting short story, and a Indian dessert drink. I love it! This book is a winner all the way around!

This book is the perfect complement to Carol’s first book on delicious gluten-free desserts. As a busy Mom with two little kids, this cookbook is perfect for me. The recipes are so versatile and easily adapted to fit our dairy-free needs. I can’t wait to try the Vegan Breakfast Bars, and my kids already love the Dairy Free Peanut Butter Fudge Sauce. My favorite section is Easy Entertaining – lots of fabulous meal ideas for guests. Thank you Carol for another fabulous cookbook.

Of course Carol delivers with mouthwatering flavors and natural ingredients to create simple, quick gluten-free meals but my favorite part about this book is how it’s organized. Recipes are arranged by menus for all occasions, including sides and desserts, so you can literally create a whole meal in a short amount of time. In-laws are coming for dinner? There’s an impressive menu for that. Throwing a tapas party? There’s one for that too. There are also menus for Curry in a Hurry, Quick Comfort Food, Weeknight Mexican Fiesta, and more. This clever organization totally takes the guesswork out of planning and makes you look like a star!

With the combination of staples you have in your pantry and using fresh ingredients as the basis of flavor for many of these recipes, you come off as a genius and friends think you’ve been cooking all day! My kids, who are brutally honest, love the food I’ve prepared so far. I am looking forward to making many more recipes from this book!! These recipes are perfect for weeknight cooking as well as easy entertaining for friends.
